Ingredients

Units Scale

Honey Soy Lamb Chops

  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/2 cup olive oil
  • 2 tbsp minced garlic (about 4 cloves)
  • Leaves from 2-3 rosemary sprigs
  • 3 racks of lamb, cut into chops (about 24)

Cucumber Yogurt Sauce

  • 1 cup Greek yogurt
  • Juice of 1/2 lemon
  • 1 garlic clove
  • 1/2 tsp salt
  • 2 tbsp fresh dill
  • 1/2 seedless cucumber, peeled

Instructions

  1. Add the soy sauce, honey, olive oil, garlic, and rosemary to a blender and blend until smooth
  2. Place lamb chops in a large bowl or container and pour the marinade over them, turning to coat thoroughly. Marinate for at least 1 hour or overnight for best flavor.
  3. Add all cucumber yogurt sauce ingredients to a blender and blend until smooth. Refrigerate until ready to serve.
  4. Preheat a grill to medium-high heat. Grill lamb chops for 2–3 minutes on the first side and 1–2 minutes on the second side, being careful not to overcook.
  5. Remove from the grill, rest briefly, and serve with cucumber yogurt sauce and desired sides.

Notes

Top Tip: Grill over high heat and pull the lamb early to keep it juicy and allow the honey to caramelize without burning.

Make-Ahead: Marinate the lamb and prepare the cucumber yogurt sauce ahead of time to make grilling day effortless.

Storage: Store leftover lamb chops in an airtight container in the refrigerator for up to 3 days. Store yogurt sauce separately for up to 2–3 days.

Substitutions: Use tamari or coconut aminos instead of soy sauce for gluten-free; substitute maple syrup for honey if needed.

Variations: Add red pepper flakes or hot honey for heat, or finish under the broiler if cooking indoors.
