Juicy, zesty air fryer chicken taco meatballs with lime — a high-protein snack that’s quick, kid-friendly, and perfect for meal prep.
Ingredients

3/4 cup cottage cheese
3 tbsp taco seasoning
2 tbsp ranch seasoning
1 lime, juiced
1 egg
2 tbsp hot sauce
2 lb ground chicken
3/4 cup breadcrumbs
2 tbsp chopped cilantro
Instructions
- Preheat air fryer to 400°F; coat basket with avocado oil.
- Blend cottage cheese, taco seasoning, ranch, lime juice, eggs and hot sauce until smooth.
- Mix with chicken, breadcrumbs (I like my homemade breadcrumbs), and cilantro
- Lightly oil bottom of air fryer with avocado oil.
- Scoop meatballs with a teaspoon or tablespoon ice cream scoop and air fry in a single layer for 7-10 minutes until cooked through. Shake the basket around the 5 minute mark to keep from sticking.
- Serve hot or enjoy straight from the fridge for meal prep.
