Ingredients
2 sticks (1 cup) unsalted butter, softened
3/4 cup brown sugar
3/4 cup white sugar
2 large eggs, room temperature
1/2 (15-oz) can pumpkin purée (1/2 cup strained)
1 tsp vanilla extract
2 tsps pumpkin pie spice
3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp salt
1 tsp baking soda
3 cups all-purpose flour
1 (10-12 oz) bag semi-sweet chocolate chips
Instructions

Strain pumpkin purée in a fine mesh sieve lined with coffee filter.

Preheat oven to 375°F (190°C).

In a large stand mixer, cream butter and sugars until fluffy.

Add eggs, pumpkin, and vanilla; mix.

Add spices, baking soda, and salt.

Mix in flour gradually.

Stir in chocolate chips.

Scoop dough on parchment-lined baking sheets.
