Description

Ingredients

Units Scale

Tuna Mixture:

  • 1 lb sushi-grade tuna, cut into small chunks
  • 1/2 cucumber, minced
  • 2 tbsp chives, minced
  • 2 tbsp shallots, minced
  • Zest of 1 orange
  • Zest of 1 lime
  • 1 tbsp sesame seeds

Vinaigrette:

  • 2 tbsp orange juice
  • 1/2 lime, juiced
  • 2 tbsp tamari
  • 2 tsp sesame oil

Avocado:

  • 1 avocado, cut into small chunks
  • 1/2 lime, juiced
  • 1 tsp soy sauce

Wontons:

  • 12-15 wonton wrappers
  • Avocado oil, for frying

Wasabi Mascarpone:

  • 1/2 cup mascarpone
  • 1 tsp wasabi paste, more to taste
  • 1-2 tsp water, to thin

For Serving:

  • Microgreens
  • Lime wedges

Instructions

  1. Combine the tuna tartare ingredients in a medium bowl.
  2. Whisk together orange juice, tamari, lime juice, and sesame oil, then gently toss it with the tuna mixture.
  3. Combine avocado, lime juice, and soy sauce in a small bowl.
  4. Whisk mascarpone, wasabi paste, and water until smooth.
  5. Fry wonton wrappers in avocado oil until golden and crisp, 1-2 minutes per side. Drain on paper towels and season with salt.
  6. Set a ring mold on a plate, layer the avocado on the bottom, then top with the tuna mixture. Remove the mold and garnish with microgreens.
  7. Serve with the fried wontons, wasabi mascarpone, and lime wedges.

Notes

Top Tip: Buy your tuna last on your shopping trip, ask specifically for sushi-grade or sashimi-grade, and keep it ice-cold until you're ready to mix it. Everything else in this recipe can wait around — the tuna can't.

Food safety: This is a same-day dish. Once the tuna is dressed, eat it within an hour or two, and don't plan on leftovers — don't refrigerate and reheat, don't freeze.

Substitutions: Sushi-grade salmon works in place of the tuna. Store-bought wonton chips can stand in for the fried wontons. Crème fraîche or full-fat cream cheese thinned with water works in place of mascarpone.

Variations: Drizzle with spicy mayo for heat, swap in diced mango for the avocado, or use grapefruit or yuzu juice in the vinaigrette instead of orange and lime.
