Oven Baked Ribs Recipe (Cola and Coffee Braised!)

Description

Fall-off-the-bone tender ribs braised in Coca-Cola and coffee with a sweet and smoky homemade rub, then finished on the grill with BBQ sauce. The ultimate showstopper for cookouts, Sunday dinners, and feeding a crowd!


Ingredients

For the Rib Rub:

1 1/2 cups brown sugar

2 tablespoons salt

2 tablespoons paprika

2 tablespoons chili powder

1 teaspoon cayenne pepper

1 teaspoon cumin

1 teaspoon ground black pepper

1 teaspoon red pepper flakes

For the Ribs:

4 racks baby back ribs (about 6-8 lbs total)

32 oz Coca-Cola (one large bottle)

1 cup brewed coffee

5 garlic cloves, minced

2 tablespoons yellow mustard

1 cup vinegar

2 lemons, sliced

1 orange, sliced

BBQ sauce of your choice (I love mixing a sweet sauce with a spicy one!)


Instructions

  1. Preheat oven to 300°F.
  2. Combine brown sugar, salt, paprika, chili powder, cayenne, cumin, black pepper, and red pepper flakes in a medium bowl. Mix until evenly combined.
  3. Generously rub the spice mixture over all sides of each rack of ribs.
  4. Place ribs in a large deep ovenproof tray or disposable food prep trays, ensuring all racks have the same side facing up.
  5. In a large Pyrex measuring cup, whisk together Coca-Cola, brewed coffee, minced garlic, yellow mustard, and vinegar.
  6. Pour the braising liquid into the corner of the baking tray — not directly over the ribs — so you don’t wash off the spice rub.
  7. Top the ribs with sliced lemons and oranges.
  8. Cover the tray extremely tightly with heavy duty aluminum foil. Place in the oven for 1 hour and 45 minutes.
  9. Remove from oven. Carefully pull back the aluminum foil (there will be a lot of steam). Gently flip each rack of ribs.
  10. Re-wrap tightly with aluminum foil and return to the oven for 1 hour and 30 minutes.
  11. Transfer cooked ribs to a clean tray. Slice into halves or thirds if desired. Let rest for 20-30 minutes, or cool in the fridge until ready to grill.
  12. Heat your grill to medium-high.
  13. Baste ribs generously with BBQ sauce and place on the grill.
  14. Cook on each side, basting with more BBQ sauce as you go. Cook and baste twice on each side until the sauce is caramelized.
  15. Serve alongside your favorite BBQ sides with extra sauce on the side.

Notes

Baby back ribs are best for this recipe. Spare ribs or St. Louis-style ribs work too — add 15-20 extra minutes to the braising time.

These ribs are PERFECT for prepping ahead. Braise in the morning (or the day before), refrigerate, and grill when your guests arrive.

Pour the braising liquid into the corner of the tray, not over the ribs, to keep the spice rub intact.

I love mixing a sweet BBQ sauce (like Kansas City-style) with a spicy one for the best of both worlds.
