This oven baked ribs recipe is what I make when there's a crowd coming and no smoker involved. A sweet, smoky brown sugar rub, then a long low braise in Coca-Cola, coffee, garlic and vinegar until the meat gives up. Finish them on the grill with BBQ sauce. They taste like they spent all day at a smoker, and they didn't.

These come out for the obvious ones - Memorial Day, Labor Day, the Fourth - and any time there's a big group to feed without spending a fortune. Someone always asks for the recipe. Everything You Need for This Oven Baked Ribs Recipe

The braising liquid is where this happens. Cola sweetens and tenderizes; the coffee brings a deep, almost smoky bitterness nobody can ever identify. With the rub and a little citrus behind it, it works.

For the Rib Rub:

  • Brown sugar
  • Salt
  • Paprika
  • Chili powder
  • Cayenne pepper
  • Cumin
  • Black pepper
  • Red pepper flakes

For the Ribs:

  • Baby back ribs - 4 racks (about 6-8 lbs total)
  • Coca-Cola
  • Brewed coffee
  • Garlic cloves, minced
  • Yellow mustard
  • White Vinegar
  • Lemons, sliced
  • Orange, sliced
  • BBQ sauce of your choice (I love mixing a sweet BBQ with a spicy one!)
  • Heavy duty aluminum foil

Why You'll Love This Oven Baked Ribs Recipe

  • Fall-off-the-bone tender. The low, slow braise in cola and coffee breaks down the connective tissue. No smoker needed.

How to Make Oven Baked Ribs with Cola and Coffee

Rub them, braise them in the cola-coffee mixture, then finish them on a hot grill with sauce. Here's how:

Make the Rib Rub

Combine brown sugar, salt, paprika, chili powder, cayenne, cumin, black pepper, and red pepper flakes in a medium bowl. Mix until evenly combined.

Season the Ribs

Generously coat all sides of each rack with the rib rub. Place ribs in a large deep ovenproof tray or disposable food prep trays, ensuring all racks have the same side facing up.

Make the Braising Liquid

In a large Pyrex measuring cup, whisk together Coca-Cola, brewed coffee, minced garlic, yellow mustard, and vinegar. Pour the mixture into the corner of the baking tray so you don't wash off that beautiful rib rub.

Add Citrus and Braise

Top the ribs with sliced lemons and oranges. Cover the tray extremely tightly with heavy duty aluminum foil - you don't want any steam escaping. Place in a 300°F oven for 1 hour and 45 minutes.

Flip and Continue Braising

Remove the tray from the oven. Carefully pull back the aluminum foil - there will be a LOT of steam, so be careful. Gently flip each rack of ribs. Re-wrap tightly with the foil and return to the oven for an additional 1.5 hours.

Rest the Ribs

Transfer the cooked ribs to a clean tray. You can slice them into halves or thirds here if you like. Let them rest for 20-30 minutes, or cool them in the fridge until you're ready to grill.

Grill with BBQ Sauce

Heat your grill to medium-high. Baste the ribs generously with your favorite BBQ sauce and place them on the grill. Cook on each side, basting with more sauce as you go. I like to cook and baste twice on each side until the BBQ sauce caramelizes.

Serve them alongside your favorite BBQ sides, with extra sauce on the side. Fair warning: people go through these fast, so make extra.

Oven Baked Ribs Recipe Substitutions

Easy swaps if you need them:

  • Cola: Pepsi or Dr Pepper both work great. Diet cola will work but the caramelization won't be quite as rich since there's less sugar.
  • Coffee: Use strong brewed coffee, not espresso. If you don't have coffee on hand, skip it and add an extra cup of cola - you'll lose that smoky depth but the ribs will still be incredible.
  • Vinegar: White vinegar is my go-to, but apple cider vinegar works really well too.
  • Yellow mustard: Dijon mustard adds a slightly different tang but works beautifully.
  • BBQ sauce: Use whatever you love! I like to mix a sweet Kansas City-style sauce with a spicy one for the best of both worlds.

Oven Baked Ribs Recipe Variations

Ways to make it your own:

  • Slow cooker version: Place rubbed ribs in a slow cooker, pour the cola-coffee mixture over them, and cook on low for 8 hours. Finish on the grill the same way.
  • Spicy kick: Double the cayenne and add a few dashes of your favorite hot sauce to the braising liquid.
  • Asian-inspired glaze: Swap the BBQ sauce for a mix of hoisin sauce, soy sauce, and sriracha for the grilling step.
  • Oven-only finish: No grill? No problem. Brush the ribs with BBQ sauce and broil on high for 3-5 minutes per side until caramelized. Watch them closely!

What I use, plus cheaper alternatives:

  • Large Deep Roasting Pan - A heavy-duty stainless steel roasting pan is ideal for even heat distribution and holds up to the braising liquid beautifully. Budget: Disposable deep aluminum pans work perfectly and make cleanup a breeze.
  • Heavy Duty Aluminum Foil - You need a tight seal to trap all that steam, so heavy duty is non-negotiable here. Regular foil tears too easily. Budget: Double-layer regular foil if that's what you have.
  • Pyrex Measuring Cup - A 4-cup glass measuring cup makes mixing and pouring the braising liquid so much easier. Budget: Any large bowl with a pour spout will do the job.
  • Long-Handled Grilling Tongs - These are essential for flipping ribs both in the oven and on the grill without getting burned. Budget: Regular kitchen tongs work, just be careful with the heat.
  • Silicone Basting Brush - A heat-resistant silicone brush makes basting the BBQ sauce on the grill so much easier and cleaner. Budget: A clean kitchen spoon to drizzle and spread the sauce.

How to Store Oven Baked Ribs

Refrigerator: Store leftover ribs (if there are any!) in an airtight container for up to 4 days. Reheat in a 300°F oven, covered in foil, for about 20 minutes until warmed through. You can also brush them with a little extra BBQ sauce and throw them back on the grill for a few minutes.

Freezer: These ribs freeze beautifully. Wrap individual portions tightly in plastic wrap, then aluminum foil, and freeze for up to 3 months. Thaw overnight in the fridge before reheating.

Pro tip: The braised ribs (before grilling) actually store and freeze even better than the finished product. Braise ahead of time, refrigerate or freeze, then grill with BBQ sauce when you're ready to serve.

Top Tip

Pour the braising liquid into the corner of the tray, not over the ribs. Pour it on top and you wash off the rub you just put on. The liquid finds its way around them as it heats.

What type of ribs should I use for this recipe?

Baby back ribs are my go-to for this recipe - they're tender, meaty, and cook beautifully with this braising method. Spare ribs or St. Louis-style ribs will also work, but they have more fat and connective tissue, so add an extra 15-20 minutes to the braising time.

The coffee adds a deep, roasty, almost smoky flavor that mimics the complexity you'd get from a smoker - without actually needing one. Together, they create a braising liquid that's unlike anything else.

Can I prep these ribs ahead of time?

Yes - and honestly, I recommend it! You can braise the ribs in the morning (or even the day before), let them cool, and refrigerate them until you're ready to grill. This makes them perfect for entertaining - all the heavy lifting is done ahead of time, and you just fire up the grill when your guests arrive.

Fall-off-the-bone tender ribs braised in Coca-Cola and coffee with a sweet and smoky homemade rub, then finished on the grill with BBQ sauce. The ultimate showstopper for cookouts, Sunday dinners, and feeding a crowd!

1 ½ cups brown sugar

2 tablespoons salt

2 tablespoons paprika

4 racks baby back ribs (about 6-8 lbs total)

32 oz Coca-Cola (one large bottle)

1 cup brewed coffee

5 garlic cloves, minced

2 tablespoons yellow mustard

1 cup vinegar

2 lemons, sliced

1 orange, sliced

  13. Baste ribs generously with BBQ sauce and place on the grill.
  14. Cook on each side, basting with more BBQ sauce as you go. Cook and baste twice on each side until the sauce is caramelized.
  15. Serve alongside your favorite BBQ sides with extra sauce on the side.
