Carbonara doesn't need a vegetable to be great, and I'll die on that hill for the classic version. But, by mid-July I'm buried in squash from my mom's garden and looking for anywhere to put it. Adding it to a classic Carbonara turned out to be the answer - zucchini carbonara gets you the same silky, peppery sauce as the original, but you get the added summer flavor. Plus, it looks absolutely stunning!

Ingredients for Zucchini Carbonara

Seven simple ingredients come together here - pancetta and zucchini for the base, eggs and two cheeses for the silky sauce, and a pound of spaghetti to bring it all together.

How to Make Zucchini Carbonara

Get your zucchini squeezed dry and your egg mixture whisked before the pasta water even boils - carbonara moves fast once the pasta is done.

Shred and Dry the Zucchini

Shred the zucchini over a clean towel, then gather it up and squeeze out as much liquid as you can. Wet zucchini waters down the sauce.

Whisk the Egg Mixture

Whisk the eggs, egg yolks, and both cheeses together in a bowl and set aside.

Cook the Pasta & Pancetta

Bring a large pot of water to a boil and cook the spaghetti until al dente. Meanwhile, cook the pancetta in a separate pan until crisp, then remove it with a slotted spoon. Add the zucchini to the same pan and cook 4-5 minutes.

Toss & Serve

Scoop out 1 cup of the starchy pasta water, then drain the spaghetti. Toss the pasta with the zucchini and pancetta. Take the pan off the heat, then stir in the egg-cheese mixture, adding reserved pasta water a little at a time until the sauce turns silky. Serve immediately.

Substitutions

A few swaps that won't throw off the dish if your pantry looks different than mine.

  • Guanciale or bacon instead of pancetta - guanciale is the more traditional carbonara meat if you can find it; thick-cut bacon works in a pinch.
  • All parmesan if you don't have pecorino - pecorino brings a sharper, saltier bite, but straight Parmigiano Reggiano DOP still tastes great on its own.
  • Gluten-free pasta - a bronze-cut gluten-free spaghetti holds the sauce better than the smooth kind - just watch your cook time.

Variations to Try

A few ways to make this your own once you've got the base method down.

  • Add peas - a handful of thawed frozen peas tossed in with the zucchini adds color and a little sweetness.
  • Cacio e pepe finish - finish with a heavy hand of cracked black pepper and extra pecorino for a sharper, more peppery bite.
  • Add grilled chicken - slice up a grilled chicken breast and fold it in with the pasta for a heartier dinner.

Storage

Egg-based sauces like this one are best eaten fresh - the silky texture is the whole point, and it doesn't come back the same way twice.

Leftovers keep in an airtight container in the fridge for up to 2 days. Reheat gently in a skillet over low heat with a splash of water or milk, stirring constantly, just until warmed through - high heat will scramble the eggs. Skip the freezer; the sauce breaks and turns grainy once thawed.

Top Tip

Always mix the egg-cheese mixture into the pasta off the heat, not on the stove. The residual heat from the pasta and pan is enough to gently cook the eggs into a silky sauce - direct heat scrambles them in seconds. Room-temperature eggs also help the mixture come together smoothly instead of seizing when it hits the warm pasta.

FAQ

A few questions that come up every time I post a carbonara.

Is it safe to eat the eggs in carbonara?

Yes - the eggs aren't eaten raw. Tossed off-heat with hot pasta and reserved pasta water, the residual heat gently cooks them into a silky sauce, the same technique used in classic carbonara. Room-temperature eggs help them cook more evenly and lower any risk of an undercooked sauce.

Why did my sauce turn out clumpy instead of silky?

The pan was probably too hot when you added the eggs. Pull it off the heat completely before stirring in the egg-cheese mixture, and add the reserved pasta water gradually to loosen it.

Can I make this ahead of time?

Carbonara is really a cook-and-eat-immediately dish. You can shred the zucchini and whisk the eggs and cheese ahead of time, but the final toss should happen right before serving.

Do I have to squeeze the zucchini dry?

Yes - skip this step and the extra water will dilute the sauce and keep it from getting silky.

Instructions

  1. Shred zucchini over a towel; squeeze dry.
  2. Whisk eggs, egg yolks, and both cheeses together; set aside.
  3. Bring a pot of water to a boil and cook spaghetti until al dente. Meanwhile, cook pancetta until crisp; remove with a slotted spoon. Add zucchini to the pan and cook 4-5 minutes.

Notes

For the best silky sauce, use imported DOP-certified Parmigiano Reggiano and Pecorino Romano, finely grated, and pull the pan off the heat before adding the egg mixture so it doesn't scramble. A splash of reserved pasta water brings it all together. Swap the pancetta for guanciale if you can find it, or use turkey bacon for a lighter option. A 12-inch stainless skillet and a fine box grater make this one easy.
