Most hot honey chicken recipes stop at a chili-flake drizzle and call it a day. This one goes bigger - Dijon-marinated thighs hit the grill right next to ripe peaches, and both get finished in the same butter-honey glaze with real heat behind it. Sweet, smoky, a little dangerous, exactly what a summer dinner should be.

Ingredients for Hot Honey Chicken with Peaches

Two components here - a Dijon marinade for the chicken and a butter-honey glaze that does double duty on the peaches.

Chicken

  • Boneless, skinless chicken thighs (or bone-in, skin-on if grilling)
  • Dijon mustard
  • Olive oil

Marinate the Chicken

Whisk the Dijon, olive oil, vinegar, garlic, honey, paprika, cayenne, salt, and pepper together. Add the chicken, coat it well, and marinate in the fridge for 1-4 hours (30 minutes minimum).

Make the Hot Honey

Melt the butter with the honey and chili flakes in a small saucepan over low heat. Simmer for 2-3 minutes, until it's slightly thickened.

Brush the peach halves with a little hot honey and grill or sear them cut-side down for 2-3 minutes, until caramelized with good char marks. Toss with 1 tablespoon of the hot honey.

Cook the Chicken

Grill or sear the thighs over medium-high heat, 5-7 minutes per side, until charred and cooked through to 165°F internal. Let it rest for 5 minutes.

Plate the chicken thighs, top with the charred peaches, and drizzle with the remaining hot honey butter. Finish with flaky salt.

A few easy swaps if you're missing something or want to change up the protein.

  • Chicken breasts instead of thighs. They cook faster than thighs, so pull them at 165°F and watch the clock closely.
  • Nectarines instead of peaches. Same char, same juiciness, no peeling debate.

Storage
