I gave up frying shrimp two summers ago and never looked back - this air fryer coconut shrimp recipe gets the same crackly coconut crust with way less mess, no oil to heat, no splatter, no smoke alarm. The shrimp go from breading station to golden and crisp in under 10 minutes flat, and the pineapple salsa on the side means you're not also digging up a dipping sauce recipe - it's already sweet, a little spicy, and acidic enough to cut right through the coconut. I make this for pool days, for the Fourth, for any night my girls ask for "the sweet shrimp" by name.

Eight quick steps, one air fryer basket, and you're eating in under 20 minutes.

Build Your Dredging Station

Set up a breading station: mix the shredded coconut and panko together in one bowl, whisk the egg whites vigorously in a second bowl, and mix the flour with salt and pepper in a third.

Dredge in Flour

Dredge each shrimp in the seasoned flour, shaking off the excess.

Dredge in Egg White

Dip the floured shrimp into the egg white mixture, coating completely.

Dredge in Coconut

Press the shrimp into the coconut mixture, packing it on so it holds through cooking.

Load the Air Fryer Basket

Lightly grease the air fryer basket and spray or baste the shrimp with avocado oil. Add the shrimp to the basket in a single layer, 6 at a time, without overlapping or crowding.

Substitutions for Coconut Shrimp

A few swaps if your pantry doesn't match mine exactly.

  • No pineapple? For example, diced mango works the same way in the salsa - same sweetness, same texture.
  • Gluten-free. Instead, swap the all-purpose flour and panko for your favorite 1:1 gluten-free versions; the coconut stays the same either way.
  • No air fryer, no problem. Alternatively, these bake well in a 425°F oven for about 10-12 minutes, flipping halfway.
  • Mild instead of spicy. Either way, leave the seeds and ribs out of the jalapeño, or skip it entirely - the lime and pineapple preserves still carry the salsa.

Variations on This Coconut Shrimp

Once you've made it once, here's where you can take it.

  • Spicy mayo dip. For instance, stir sriracha into mayo for a second dip alongside the salsa.
  • Sweet chili sauce. Alternatively, swap the salsa for store-bought sweet chili sauce on busy nights.
  • Adults-only salsa. Finally, add a splash of dark rum to the pineapple salsa for a grown-up take - great next to a cold glass of wine.

Storing and Reheating Air Fryer Coconut Shrimp

This one's best fresh, but leftovers still have a life.

Store cooled shrimp in an airtight container in the fridge for up to 2 days. Reheat in the air fryer at 350°F for about 3-4 minutes to bring the crust back - skip the microwave, it turns the coconut soft and chewy instead of crisp. The salsa keeps separately in the fridge for up to 2 days; give it a stir before serving since the lime juice pulls some liquid out of the cucumber and pineapple as it sits. I don't recommend freezing the air-fried shrimp - the coating gets soggy once thawed.

Top Tip

Don't overcrowd the basket - cook the shrimp in a single layer with a little space between each piece so hot air moves all the way around, or you'll get a soggy spot where two pieces touch. Press the coconut mixture onto the shrimp firmly, too; a light dredge falls off in the basket.

Can I use frozen shrimp?

Yes — just thaw completely and pat them very dry before breading, or the coating won’t stick.

Can I make this ahead of time?

You can bread the shrimp up to 4 hours ahead and keep them in a single layer in the fridge, uncovered, until you're ready to air fry.

Is the salsa very spicy?

Not with one seeded jalapeño — it’s a gentle warmth. Leave it out entirely if you’re feeding kids.

What size shrimp works best?

Large shrimp (26-30 count) — big enough to hold the coating without overcooking in the time it takes the crust to turn golden.
