How to Make Esquites (Mexican Street Corn Salsa)
Blend the sauce first so it has time to sit while the corn grills - the flavors round out fast.

Blend the sauce.
Add the Greek yogurt, cilantro, garlic, lime juice, and salt to a blender. Blend until smooth, then set aside.

Grill the corn.
Heat a grill to medium-high. Grill 2 ears of corn, turning occasionally, until charred on all sides.

Cut and mix.
Cut the kernels off all 4 ears of corn (2 grilled, 2 raw) and add to a medium bowl with the red pepper, red onion, and jalapeño if using. Mix to combine.

Finish.
Add the yogurt sauce, cilantro, and cotija. Mix well, then taste - add more lime juice and salt if needed.
Substitutions
A few easy swaps if you're missing something.
- No grill? Char the corn in a dry cast-iron skillet over high heat, or use the broiler.
- No Fage? Any plain, full-fat Greek yogurt works - just avoid nonfat, which thins out in the blender.
- No cotija? Feta is the closest swap in saltiness and crumble.
- Skip the jalapeño for a milder version, or leave the seeds in for more heat.

- Add diced avocado right before serving for a chunkier, richer version.
